  • 400g lean pork fillet, trimmed
  • 1 teaspoon cinnamon
  • ½ teaspoon ground fennel
  • 1 x 400g packet coleslaw kit (dressing discarded)
  • 1 red apple, thinly sliced
  • ¼ cup buttermilk
  • 1 tablespoon lemon juice
  • 2 tablespoons reduced-fat mayonnaise
  • 4 small wholegrain rolls, halved
  • 1 avocado, thinly sliced

    Instructions


    1 Preheat oven to 200°C. Line a large baking tray with baking paper. Place pork on prepared tray. Rub with spices, lightly spray with olive oil and bake for 10 minutes. Rest before slicing.

    2 Meanwhile, place coleslaw and apple in a large bowl, tossing to combine. Combine buttermilk, lemon juice and mayonnaise in a separate bowl. Pour over apple coleslaw, tossing to combine.

    3 Top roll bases with avocado, pork and coleslaw. Sandwich with roll tops and serve.

    Instead of using bread rolls, you can serve these pork sliders in baby gem or iceberg lettuce cups if you prefer.
